The transition and vision

Reinventing a restaurant is no small task. What inspired the shift from Palmer Steakhouse to Palmer Kitchen + Spirits?

“Change is both an opportunity and a challenge. We saw a chance to redefine our culinary experience, embracing a more diverse and inviting menu while maintaining the warmth and hospitality that the community cherishes. It wasn’t just about a name change – it was about evolving to better serve our guests.”

A menu with meaning

Your menu highlights international flavours while using Okanagan ingredients. What’s the philosophy behind this approach?

“We believe in celebrating the best of both worlds. The Okanagan offers some of the freshest produce, wines and cheeses, while global flavours inspire creativity. By merging these elements, we craft a dining experience that feels both familiar and exciting.”

What dishes have truly resonated with guests?

Guests have gravitated toward signature dishes like Butter Chicken, Tuscan Scallops and Prawns, the Okanagan Garden Salad, and our unique take on the Okanagan Burger. Each dish tells a story of bold flavours meeting fresh, local ingredients.

The addition of breakfast and brunch has been a game-changer. What impact has this had on your clientele?

“Introducing breakfast and brunch has attracted a broader audience, from hotel guests to locals looking for high-quality morning dining. Favourites like Steak & Eggs, Palmer Benny and Duck Confit Benny have quickly become must-try items, making mornings at Palmer Kitchen + Spirits something special.”

Enhancing atmosphere and building community

The private loft space has been a major addition. How has it been received?

“It’s been embraced as a go-to for private dinners, corporate events and intimate celebrations. The ability to create personalized menus and offer an exclusive dining atmosphere has added a new dimension to our hospitality.”

How does Palmer Kitchen + Spirits support local producers and events?

“We collaborate with local wineries, breweries and farms to highlight the region’s best offerings. Beyond sourcing ingredients, we actively participate in community events, such as hosting private dinners for the Salvation Army and joining the Mug Chili Cook-Off at the Art Gallery. Supporting our local network is fundamental to our identity.”

Looking to the Future

Are there expansion plans on the horizon?

“While expansion is always a possibility, our current priority is to solidify our brand and build strong relationships with our guests. That said, we’re excited about the coming launch of our rooftop patio this summer – a space that will bring a whole new dynamic to dining in Penticton.”
